The story behind the sauce
Fried red. Lagos loud.
The sauce begins with ata rodo and tatashe, two peppers that bring distinct heat, fruit and colour.
They are blended with onion and fried patiently in oil until the raw edge disappears and the colour deepens. The result is direct, savoury and unmistakably Nigerian.
