Anjali / The opening note

Anjali grew up in Pune eating thecha with bhakri and simple vegetables. One rough spoonful could carry roasted chilli, garlic and groundnut across a whole plate.

The story behind the sauce

Pounded green. Pune fire.

The bowl was small because nobody needed much. Thecha is about immediacy: blistered chillies, toasted ingredients and texture you can still recognise.

The chillies are pounded rather than blended with garlic, roasted peanuts and cumin. The texture stays coarse and the flavour stays vivid.

Smooth is not the point. You should know what was pounded.Anjali
