The story behind the sauce
Dark and smoky.
Black shito is not black pepper sauce. It is a Ghanaian chilli condiment with smoky, savoury depth from dried seafood, chilli and aromatics.
The ingredients cook patiently in oil until dark and concentrated. Every household’s version is different; David’s balances sea, smoke and a heat that stays after the first spoonful.
